Rossese di Dolceacqua


Our favourite wine, the wine used for celebrations. The first Ligurian wine to receive DOC classification in 1972, this red is the symbol of the whole region. The profile of Doria castle, which remains in the mind of visitors to Dolceaqua, stands out against the white background of the label.

Wine region

The vineyards of our growers cover the parts of the Nervia and Verbone valleys that are most suitable for vine cultivation with mainly clayey, sandy soils with a high pebble content, low levels of limestone and pH levels ranging between sub-alkaline and acidic.

Cultivation systems

Rossese is cultivated with the traditional alberello system with one spur per branch. All aspects of vine cultivation are carried out by hand due to the morphology of the terrain.

Winemaking

The hand-harvested grapes are delivered by the members of the cooperative just a few hours after the grape harvest and are soft pressed as soon as they arrive in the winery. Fermentation takes place at a controlled temperature (28°C) in stainless steel vats using selected yeasts. During the maceration process (4-6 days) the wine must is carefully monitored using chemical and organoleptic tests. Must is pumped over the grape dregs and delestage racking is carried out; both processes ensure maximum colour and flavour extraction. Ageing and malolactic fermentation take place in steel vats. The wine is only bottled when it is deemed to be ready. .

Tasting

Dry red wine. Fairly intense ruby red colour with hints of purple. It has a vinous, fragrant bouquet when young and with ageing gains depth and an ethereal quality with delicate notes of cooked cherries and slightly wilted rose petals. It has a well-balanced, slightly dry flavour with gentle tannins. It leaves a pleasantly astringent aftertaste. It pairs well with white meats, especially rabbit, medium-matured cheeses and, if served at a slightly cooler temperature, goes well with elaborate fish dishes such as dishes using dried cod and stewed octopus.
